Ooh!! The set up was all wonky and it was going to a different keyboard's settings.

Sadly, it now is apparent to me that it doesn't have Canadian English. I just can't win lol

Just english thumb key with symbols for me. There is a layout with a compose key to make accents like you would on an international keyboard (compose+a+`) or (compose+s+s), but I don't use it personally

Sorry, I only tried the two mentioned here but I am an idiot; Futo does have Japanese! Unfortunately it fits not have Canadian English so I'm keeping Gboard for now.

I've used it from way back when and it gets progressively worse each year. This app used to save my ass drunk typing and absolutely can't now. Course it could be me getting worse so I don't know.
