Recently (a few weeks ago?) if seemed like my settings for Connect were reset. Like, the default was suddenly cards, etc.
Also I was used to sort by New by default, but now it always seems to switch to Active, causing me to miss posts.

I can't find the setting to set the default sorting order to New - where should I look for that option?

In Settings, if you go into Post Customization, the Default sort for Posts, at the top, is for your feed. A bit further down, the Sticky sort per community setting can also be set for specific communities and overrides the upper setting. That second setting does come up if you search "sort" but the first doesn't. Some of the settings seem to be unlabelled and does not come up in search.

Regarding the reset of your settings, that does seem odd. If other people have experienced this as well, hopefully they'll chime in with their experience. I've had this happen way back but haven't noticed this recently.

It doesn't seem to be all settings - my accounts are still there, but it also changed the default landing page from Subscribed to All.

In case you didn't already know, to change the feed, from the main menu on the left, tap on the three dots for Frontpage to change it to the default. Connect calls your Subscribed feed Frontpage.

Yeah, a few thing changed to possibly chalk it up to mis-taps or something; does seem like something caused it.
