I'm very silly and human web UI is a little tricky for me. I hear that we can have our species noted now. Could that one of you help me here?

Go to https://multiverse.soulism.net/u/Mechoselachia/profile and scroll down to Extra Fields. You can put anything you like in those, and if you put in "Pronouns" or "Species", it'll display next to Your username. If you put in both, whichever is last will display.

Yes, I see that. I'm confused by the categories offered. Do I define a field and then enter the data points into it? Or is each cell offered as a whole option?

You define a field and enter the data into it. Field on the left, entry on the right.
