I think the Lemmy logo being a blank-ish Lemming works well for it. Kinda like an invitation to add in your own characteristics (similar to how one would make their owninstance), even if that design choice wasn't the intention of the creator.

If there's a redesign needed, maybe the proportions could be changed, but idk.

Honestly I think the current logo is the best of the ones presented. It is a simple line drawing which means it looks good as a tiny thumbnail. It is a bit awkward and simple but also unique and easily recognizeable compared to others which all look very generic.

I think if you want a better logo you may need to actually put in the effort and draw it yourself, AI is bad at coming up with truly unique and striking brand images for now.
