We why use "Yall" instead of "Y'all" as a pronoun.

yall is alternative mispelling of "y'all"
We like to be called "yall" and not "y'all" based on personal perefence. Think of "yall" as neopronoun, completely detached from the english term "you all".

Some beings prefer to be called "y'all" over "yall". It all comes down to pereference, which is why we highly recommend reading beings' bios before inteeacting with them!
