I had one of these in Porto earlier this year. Certainly one of the meals of all time.

But seriously it was good. Didn’t look this fancy by a long shot.

Can it be ordered with the bread on the side? I feel like it will get soggy quickly. Or is that the expectation?

Nope! If you remove the bread from a francesinha it's not a francesinha anymore! It's like removing the bread from a hotdog

That's kinda the expectation but in some places the bread is toasted a bit before so it doesn't get that soggy.

That sauce with the fries is so good

Be warned the recipe for the sauce is involved and there's thousands of variations
