Best Italian I've ever had in my life was a small restaurant down in Jaco. They opened up a brand new $300 wheel of parm just to make that pasta dish where they scoop it out and throw everything in it. Owner comes out and I keep asking him if he's sure, "Absolutely! I'll just make it the special next week!" He preps it for us. People are filming it. The hostess calls in a band from on the street who comes and plays for us... It was like something out of a movie.

Love Costa

Some of it goes into your meal, some of it gets saved for other meals.

Red coral tuile.

Frequent with seafood dishes.

Dug up one of the pics. I don't remember it being spaghetti. I thought it was fettucini. Either way, yeah, it was delicious. There was nothing left.

Ooo... All I have ever seen done inside the cheese wheel is alfredo using the cream and pasta to melt and incorporate the cheese into the sauce. Full on spaghetti bolognese inside a wheel of parm would be pretty awesome too.
